The Technology•Food•Sustainability (TFoodS) Conference 2023, organised by TUMCREATE and Technical University of Munich, in partnership with A*STAR - Agency for Science, Technology and Research, Nanyang Technological University Singapore, and Singapore Institute of Technology, spanned two insightful days.
Staff and students from the
Diploma in Food Science & Technology (DFST) course had an opportunity to learn from start-ups who showcased their products and solutions to support Singapore’s 30 by 30 goal, such as KosmodeHealth Singapore's W0W Noodles, Mycosortia's FibProt tuna and FibProt mayo, and Altimate Nutrition's cricket protein bars.
The conference placed a strong emphasis on alternative proteins, featuring research presentations and panel discussions led by experts covering diverse topics such as food innovation, tissue engineering, nutrition, consumer insights, and agritech. Key takeaways highlighted the importance of a circular economy to reduce food waste and the translation of upstream research into practical applications.
